Caught Red Handed

The pigment from the beets got everywhere and one of the McClosky coined the harvest as being caught "red handed". The Greens were bagged for the Project Pickle "green for greens" fundraiser.

I had this fantastric beet juice at a restaurant last week. I have tried to duplicate it with no success and have looked online for various recipes to no avail.

It was almost smoothie like, very rich with a nice touch of sweetness. I am going to have to go back and ask I guess. Anyone have any recipes?

We purposely left various crops in the ground at various schools so that the kids could have something to harvest when they came back to school. In this instance....yes, the beets woiuld have ideally been harvested a couple of weeks earlirer but each school has its own scheduling issues.

These beets will end up being pickled in any case.

 

Those beets look a little long in the tooth? Past their prime?
